Meal Plan for the Week

This week, we will continue to eat the stuff we have on hand buying only what is absolutely necessary. We got 3 giant zucchini last week from a friend that we need to use up, and one giant cucumber. We also picked about 5 lbs of blackberries (see pic) from D's family's farm. My hands are scratched up. It's amazing how such a nasty invasive thorny plant can put out such heavenly berries. And we bought about 5 cantaloupes last week when Safeway had them on sale for $1 apiece. I also have some assorted veggies and other foods that need to be used up. We will be eating:

* Veggie Stir Fry over Rice
* Rice/Bean/Sauteed Veggie Bowl
* Bruschetta
* Baked Potatoes w. Beans, Cheese and Veggies
* Cabbage/Zucchini Lo-Mein
* Tabbouleh
* Salads
* Berries and Cantaloupe for dessert

    Those berries do look good! We've been eating a fair amount of cantaloupe as well.

    Yum! If you have a blender, cantaloupe agua fresca is a tasty beverage! You could find proportions online, but it's basically cantaloupe, water & sugar.

    Picking blackberries was one of the summer chores I hated but the yummy Blackberry jam and syrup in December/January always made it worthwhile.

    Blackberries freeze also if you want to make syrup, jam, ice cream, pie filling. Just a little ace in the hole if you suddenly don't want to see a blackberry again for awhile.

    Those are great ideas. I will certainly pick as much more as I can and freeze them. We've been eating them like crazy - it's fantastic!
